Went to Kallispell today

Stopped at a specialty meat and sausage mart. Picked up a Smoked Elk Summer Sausage, and a 4oz Bison Tenderloin.

Years ago I BBQ a Bison Tenderloin and it was best thing I had ever eaten. So tender you can cut it with a fork.

I had a Beefalo steak years ago and it was pretty tasty. A beefalo is a cross between a Buffalo and beef cattle....mmmmmmmm!!

I'm eager to try the Elk Sausage.

I need to plan for the Bison. Mushrooms, fresh sourdough bread (homemade), a twice baked potatoes, etc.

I've harvested 7 elk in my lifetime and they were delicious but not as good as buffalo. When I had my place in southern Ill. there was a rancher (Lieb Farms) in a nearby county that raised buffalo and sold the meat, expensive but worth every penny.

$35 a pound. A delicious treat (1/4lbs only) once every couple of years.

Local carpenter did a guided Buffalo hunt last year. I think he said it was a couple of grand for a 800lbs bison. It's on my bucket list.

This talk of buffalo made me curious, here is the latest price list from the guy I used to buy buffalo from.

Good prices. My buddy's friend works at a bison ranch down in the Bitterroots area. He showed me a picture of a 2000lbs bull. Looked like a school bus. Good money raising this excellent prime eating meat.

Not to mention that it's extremely healthy eating.

Bison has 2.42 fat grams per 100 gram serving of cooked meat.
Skinless chicken has 7.41 fat grams per 100 gram serving of cooked meat.

We ate at a restaurant downtown a week or so ago and I had a Bison burger, it was good a little dry but they over cooked it I ordered it medium. Seems like it was priced 5 or 6 dollars more than there beef burger.

Bison Tenderloin, Mash Potatoes with sour cream and shredded cheese, whole corn kernels, sauté mushrooms, and a beer. Life is Great.

Better then I could get at a restaurant within 100 miles, and even with the outrageously expensive meat, likely 1/8th the cost anywhere within 250 miles...
