DIY Smoked Almonds

I love Blue Diamond Smokehouse Almonds. But Dayum, they are expensive. I figure I can make them. A 3lb bag of raw Kirkland Almonds is $14 and a few simple ingredients and time, vs. $13 for a pound of BD Almonds (a bulk purchase) ala Amazon.

Good, but not great. I'll try again in a few days. I feel that I didn't mix the flour, salt, garlic and liquid smoke well enough. And I will use Olive oil next time rather then vegetable oil. Coconut oil if I can find some in the next few day.

And maybe less oil and more flour, or a different recipe altogether. I've got lots of Almonds to experiment with to get this right.

MR it looks like you're making them in an oven, do you have a smoker? I have a neighbor that makes them in his smoker and as they say, they are to die for.

I have a smoker. It's difficult to bring it up to temp when it's 19 degrees outside.

I definitely did not add enough salt, or I used salt that was to coarse. I've been adding salt and shaking the canister good and it's getting better.

Oh yes MR, Blue Diamond Smokehouse Almonds are sooooo good! And they are too expensive! Good luck with the homemade batches!

I spoke with my neighbor about smoking almonds, he says it's difficult to get the salt to stick to the nuts, it just falls off after a while. He makes a brine and soaks the almonds in it for 10 minutes, he says any longer and the nuts will swell and lose their texture when you smoke them.

I did a 2nd batch and more finely ground the salt. BIG Improvement!!! Still something is missing. Hmmmmm.....???? I will order some Blue Diamond almonds and inspect the ingredients. I'm thinking some brown sugar is needed.
