Polish Kabanosy Sausages

I've made these before, and they are the very very best Smoked Sausages/Slim Jims I have ever had. I ground up 12lbs of Pork Shoulder yesterday, and this is nearly 1/2 of it. I ran out of sheep casings, so the hog casings are monster size snacks. Superbowl Monster Heart Attack Snack.

Tomorrow I'll use up the rest in some Andouille Sausage for regular meals.

Between this, the salami and your breads, looks like you are pretty well covered for the winter months! How's the snow fall been up there so far?

14" of snow one night. I had to be dug out. Now it's normal with huge berms everywhere.

I just check the sausages. About 1/2 done, taking on a nice dark color, and smelling incredible.

I have finally figured out how to stuff sausages without rupturing the casings, so this activity is now a lot less frustrating. No more store bought sausages ever again.

Damn good sausages. Believe me, once you start making your own, the store crap tastes like crap.
