Always good to have cooler weather comfort food. Was up today at 0400 to make a pot of Mississippi Pot Roast. Why so early? If you want to eat by dinner or like we do on Sundays, you want it in time for a 1300-1400 sit down.
(Between you and me, next time, start it before bed. Screw 0400 on a Sunday....
Started out with a 5.26lb roast. Peppered and browned in a pan. 2 sticks of budda, 16 pepperoncini peppers, 2 packs ranch dressing powder, 2 packs au jus powder and about 9 hours in a slow cooker set to low! Remove meat from juices, use about 3 tblespoons of corn starch in a cup and a half of cold water. Stir till fully desolved. Stir into gravy slowly to thicken then add meat back in and stir good. Let simmer on low for another 30 mins and serve over mashed potatoes and sides of whatever you like. We chose carrots and red cabbage. Couple pieces of multigrain bread!
This makes a lot of meat. Probably 5-6 people or more.
Next time I may convert it to a nice German Sauerbraten.
