Beef Jerky

I've been making beef jerky now for over 10 years, and have it down to one recipe and process that I use again and again.

1/2 water
1/2 teriyaki
pepper
and either honey, syrup, or sugar

Marinate overnight and let the dehydrator do its thing.

This morning my cut strips (with the grain of course) a bit thicker then usual and 2 hours into the drying process, and it's looking damn good. Early taste test and it's some good stuff.

That looks delicious...I can eat an entire bag of jerky and wash it down with a cold Budweiser every day if I let myself do it..

I use to eat quite a bit. This will last me a month, or almost. I like to keep some on hand. Lessens the impulse to buy the overly expensive stuff at the various stores, which are often not as good.

On Man. That DOES look great. I could eat it every day too. Could you elaborate a little more on the recipe? Especially the part about the honey, syrup or sugar and your method. I get tired of spending $20.00 or so a lb. for the stuff

The honey, syrup, sugar gives a sweet flavor (duh) and a glaze to the finished jerky. Prior to mixing the marinade, I slow cook it till hot to the touch, then add it to the sliced meat. Put in a zip bag and massage it a few times before and during the night. I use an Excalibur dehydration, but plan to use my smoker next time. Pretty simple I think.

That looks like some great jerky, I used to make it all the time when I hunted, I've still got a dehydrator sitting around here somewhere.

8 hours and its done. Excellent. Nice glaze and not sticky. Thicker slices it is from now on.
