Wink There's Gonna Be Jerky!!

Just got back from hunting in beautiful Wilkes County, Georgia!! Spent a week at the hunting camp with beautiful cool weather. Had on hell of a time!!!

Wednesday, December 2nd, at 4:30 PM, I spotted and shot a very nice 180 lb 6 point buck with my Ruger M-77 Ultralight .308 Winchester. The rack was not tall, but did have a 16 1/2" spread on heavy bases. It only took a single shot was at about 100 yards. I sent a Hornady 150 grain SST Superformance bullet through both lungs and the upper heart. The chest cavity was turned to soup. The buck ran 60 yards and died.

Then, on December 7th at 11:30 AM, I shot a 167 lb (field dressed--probably close to 200 on the hoof!!) doe. I shot this one at a laser range finder verified 230 yards with my DPMS Panther Arms Oracle equipped with a Stag Arms 6.8mm SPC upper receiver. The 120 grain Hornady SST bullet took out both lungs and left a 1 1/2" exit wound, breaking three ribs. This left a great blood trail for tracking. This deer only ran 40 yards and collapsed. That is a very gratifying shot with an AR-type rifle. And Bill Clinton said that there was no sporting use for an assault rifle. What a bag of foul hot air he is!!!

Nice buck! Are you going to making jerky from whole pieces or are you going to make it from ground Venison?

I make my jerky from ground venison. I have tried the strips of whole meat. That is too much work for this fat old ex-Lineman!! I get the jerky spices from Nesco.

I like the Original, the Cajun and most of all the Sweet Hardwood flavors. I have a giant jerky shooter that I got from Bass Pro Shop. It holds a lb and an half. I dry the strips in an American Harvest 8 tray dehydrator. I will probably turn most of these two deer into jerky!! In addition to me, I have a son and a grandson that I have to keep stocked up on jerky! They are big time jerky eaters!!

Take some of that ground venison and make a venison chilli. Always a winner, and you can never beat jerky. My big dogs are willing to fight me for it.

There is nothing in the world like Bambi chili!!! Lots of onions and jalapeņos!! Great stuff!! No two batches ever the same, but all good!!
