The Sourdough Bread is getting better

It has become something to keep up with the starter. I'm pushing the time between baking, out beyond the week that the SD Starter needs to be used.

Doesn't seem to be hurting the looks, and I can say with enthusiasm that the taste is only improving. I'm now using 2 full cups of starter and a cup of water, and as much flour (bread or all-purpose and wheat flour) as necessary to get to the appropriate wet flour optimum state. Ya need a mixer to do this, and you have to hover over it to get it right.

I'm now also reducing the backing with Dutch Oven lid on (20 minutes), and extending the browning time with the Dutch Oven lid off (20 minutes). 50/50.

I borrowed from the library the ultimate book on bread making, and got a better understanding on what I am doing. It allowed me to modify my process. It’s all about learning what works for you.

Man you are killing me with the fresh baked bread! I would rather have that as anything sweet.
I don't even need any meat for a sandwich I just eat the bread like it is.

I would love to start baking bread like that here but just my wife and I pretty sure we couldn't eat it fast enough. However I would probably try and during my next doctor checkup I really don't want to here the doctor say "how did you gain 150 pounds?" you was already overweight it looks like you have a bun in the oven.
