Smoked Sausages

I'm still waiting on my sausage casings so I can make sausages. And I could not wait, so digging thru the deep freezer I found some sausages and have attempted to smoke a package. Tastes good, but next time I will not push it as far.

Wish I was closer to taste them ....So they get wrapped in casings??

Basically, I dehydrated these till all the fat was gone. I tasted this at different stages, and these went about an hour to long. I was hoping for a non grease sausage stick for snacking. Still a bit oily and not quite the store bought beef/? sticks at the grocery store.

Looking good MR, I've made tons of breakfast sausage with venison using casings I bought from the local butcher but I've never tried smoking any of it. I started with a plastic tube on my grinder but changed over to a stainless, the casings slide much easier on it and I had fewer blow outs.

I should have known better than to click on this post! I know nothing about making sausage but I know how to EAT them! Couple of those and some of your homemade bread...yeah man!
