Making Salami Today

I'm not expecting a whole lot here. To make real proper salami, takes months to cure and ferment, but this is where I will start. Any success, any at all, the real salami I will muster up the courage to make at a later date.

Maybe Salami. I've added all the ingredients and will roll it into a log in a couple of hours.

I'm predicting success, so I'm now looking into the details of making real salami. As I read the long cure process, requires cool temps and high humidity. Early April, in the crawl space of under the cabin could be the perfect place. I'll take a large 30 gallon storage bin and hang it upside down and hang the stuffed hog casings up inside the bin. Could work?

So the meat is not smoked? I guess I thought it was smoked but then again I never really gave it much thought.
What kind of meat are you using?

I'm using for this test, about 3lbs of Top Sirloin that was ground back in Dec.

This is not real Salami, IMO, like you would by at a real deli. This is baby steps towards making real slow cured Salami, that is quite expensive, upwards of $2 an ounce.

The goal:



My work today is done, now in the fridge. 24 hours from now I will pop it into the oven and will see what this creates.

Worst case the dog gets a great snack.

I doubt it will come to that. I'm like the dog, will eat about anything.

I love it, and I don't buy it much either, cause it's damn expensive. For this very reason I now make my own Jerky. I've been making my own Jerky now for 8+ years, and it is better then I can buy at the store. I sent some to Tourist, so maybe he can jump in and validate the benefits for homemade Jerky.

Hmmmmm. Maybe I will smoke this. Not a lot of smoke can get past the foil, but the low temp slow humid smoker might be an upgrade.

Maybe remove the foil after an hour and let the smoke penetrate some. Hmmmmmm.....
