If I could make cheese

I would be complete.

OMG!!! There's books and kits available.

Sourdough Bread, check.
Elderberry and Apple Wine, check.
Slow Cured Salami, check.
Homemade Cheese, O'Boy...

Go big, or stay home. The cost goes to fractions when making it at home and in bulk. There will be cheese and lots of it.

I can't afford to buy all the cheese needed to consume all the Salami I have in progress or soon to be in progress.

You're going to need a good source for milk, 1 pound of cheese requires 10 pounds (or about 5 quarts) of cow or goat milk and about 6 pounds of sheep milk.

Damn!!! There are free range cows close by, with lots of little calves about. Not sure about trying to milk a new mother cow, especially a free range one (sounds like a good way to get stomp to death), but there are no sheep around that I know of.
