Sweet Italian Sausages

Smoked!

I just finished up grinding 7lbs of pork shoulder. I'll be making 2 large >1lb chubs, and the rest in edible hog casings for tomorrow's Memorial Day Celebration.

I'll be stuffing these and smoking them during the Indy 500.

...that brings back some memories. Being 1/2 Italian and from NY Sundays usually involved the smell of my grandmother's cooking. Sweet (hot and mild too) sausage was usually in the mix, I've NEVER come across any here in the south that's quite the same as Gram's :-)
...have you ever had your cholesterol checked Montana?

We have a full house this weekend and yesterday the women spent the day in the kitchen making homemade spagetti sauce with Italian sausage and meatballs.It was a fabulous dinner to say the least.It looked like a scene out of "The Godfather"!

It's a lot of work. But with a good recipe, it is better then anything you can buy at a grocery store.

Damn, you guys are killing me. Being Italian from NYC originally, I too have spent many a Sunday and holiday at my grandmothers House in Brooklyn with a real old world Italian dinner made by my Aunt Sylvia, my grandmother, mother as a combined effort. The sauce was started on Saturday for Sunday, the meatballs, sausage, osso buco, broccoli rabe, spaghetti, bragioll all served family style at a really big long table. Oh, let me not forget the Homemade Wine, made by Uncle Frankie. OMG. I'm getting nostalgic, and hungry

Damn things need to get to 150 degrees before I pull them. I'm getting anxious. Another 10 degrees to go. Grrrrr.....
